Butter lettuce mango wraps w/almond miso dipping sauce

Wraps:
1 Head butter lettuce

1/2 Avocado, sliced

1/2 Mango, sliced

1 Cup of fresh sprouts and/or microgreens

1 tbsp Fresh thyme, chopped

2 medium carrots, washed or peeled and grated

A handful of fresh baby spinach

Optional: 2 tbsp crushed raw almonds (adds a nice little crunch)

Dipping Sauce:

1 tbsp Almond butter

1 tbsp Lime juice

1 tsp Tamari

1-2 tbsp Almond milk

1 tsp White miso paste

1/2 Clove garlic

Method / Steps
1) Mix the sauce ingredients by hand in a small bowl or in a small blender until smooth and creamy. Add more almond milk to achieve the consistency you like.

2) Mix all veggie ingredients in a large bowl

3) Loosely pile veggies into butter lettuce leaf, grab, dip and enjoy!
